Cooking delicious, wholesome food can be easy and fun! Join culinary nutritionist and Chef Jenny Breen as she demonstrates how to make a satisfying meal of fish tacos with fresh salsa, pickled radishes and a citrus green salad. Chef Breen will also highlight a vegetarian alternative by demonstrating how to make mushroom tacos. It is never too late to learn more about healthy cooking and eating!

The New Year is always a time for transition, and this year more than ever, many of us are thinking about how to achieve balance. As we devote more time to cooking at home, we also striving to find ways to build immunity and prevent sickness. While food plays a critical role in helping us feel good both physically and mentally, there’s no reason it can’t also be fun, easy and tasty! During this cooking presentation, culinary nutritionist and Chef Jenny Breen discussed the important role that whole foods play in building immunity and in keeping you physically and mentally balanced while demonstrating these three recipes:

  • Simple frittata with assorted vegetables and feta cheese

  • Sauteed hearty greens (kale, collards, or chard) with miso dressing and toasted almonds

  • Whole grain salad with sweet potatoes, apricots and chickpeas

Like many other chronic conditions, heart disease can be prevented or managed through diet and lifestyle adjustments. In honor of Healthy Heart Month at the Center for Health & Wellbeing, Chef and Culinary Nutrition Educator Jenny Breen demonstrated three recipes full of flavor and fun while also sharing how they can be heart healthy. Chef Breen also discussed simple techniques and interesting combinations to get the most out of your seasonal ingredients. This cooking demonstration is an opportunity for you to explore new and creative approaches to integrating whole foods into your life.

Featured dishes include Mediterranean Pesto Couscous with Millet, Shakshuka (with chickpeas, feta, eggs and olives) and Spinach pie (with gluten-free and deconstructed option).
